More About This Coffee

This exceptional coffee comes from the Muje Mesina washing station, located in the highlands of East Guji, Ethiopia – just 17km from the town of Adola.

The station works with a network of hundreds of smallholder farmers, who grow coffee on small plots at elevations above 1,980 masl. Shade-grown cultivation, meticulous handpicking, and slow drying on raised African beds contribute to a clean, vibrant, and layered profile that defines the character of Guji coffees.

Processing

Upon arrival, cherries undergo thorough hand sorting and floatation in clean water to remove lower-density, underdeveloped fruit.

Selected cherries are then dried for 15 to 18 days on shaded raised beds. During the day, they are regularly raked and covered between 12:00 and 3:00 to prevent overexposure to the sun, and again at night to protect from rain and moisture. Moisture and water activity are monitored throughout to determine the perfect drying point.

After drying, the coffee is rested for about one month, then hulled, graded, hand-sorted, and packed in GrainPro bags for export via the port of Djibouti.
