### The place where the story begins

 

Ninety Plus is a project that combines the Ethiopian coffee tradition with Panamanian volcanic soil. Founder Joseph Brodsky began his journey in southern Ethiopia, where he spent years researching varieties, terroir, and fermentation methods. It was there that he conceived the vision of a farm that would grow coffee with respect for nature while pushing the boundaries of processing.

The Gesha and Barú Estates are located in the cloud forests surrounding the Volcán Barú volcano. Ninety Plus gradually reforested the original pastures here with native trees and only then planted Ethiopian Gesha beneath the canopy. The trees are spaced farther apart to allow the forest room to grow—coffee is part of the ecosystem here. The result is an environment with high biodiversity and an exceptionally clean, complex flavor profile.

### How Cravings Are Born

 

This batch undergoes the experimental Thermolic™ method, one of Ninety Plus’s signature processes. Freshly picked cherries are sealed in an anaerobic environment, where fermentation takes place without oxygen. They are then gradually heated by the sun to a predetermined temperature. Controlled heat accelerates the breakdown of sugars in the pulp, naturally enhancing sweetness and promoting the development of precisely layered aromas.

Since the entire process takes place in the absence of oxygen, it favors specific microorganisms and creates a profile that is complex, clean, and distinctly characterful. The result is a velvety body, juiciness, and a flavor signature that balances a burst of fruit with an elegant chocolate depth.

### Journey Across the Ocean

 

From Ninety Plus Estates in Panama, this lot sets out on its journey under strict supervision, with an emphasis on traceability and maintaining quality at every step. After being prepared for export, the beans travel to the Port of Taipei, where they undergo further coordination and inspection to maintain their freshness and character. From there, they continue on as a precisely documented lot, ready to arrive at the roastery in a condition that matches what was created on the farm.

### Journey Across the Ocean

 

From the Port of Taipei, the shipment sets out on a long sea voyage to the heart of Europe. It ends at the Port of Koper, Luka Koper, where the container once again becomes a specific story, ready to continue its journey overland. This is the last major gateway before the beans get closer to roasting, in a state that preserves both their character and freshness.

In Dunajská Streda, this coffee enters its final—but crucial—stage: roasting at Rye Island Roastery. We roast each lot with dedication and respect for the farmer’s work: we test profiles, roast in smaller batches, and monitor every step to draw out the maximum flavor, sweetness, and complexity from the beans. We make sure that the coffee that reaches your cup is of the highest possible quality—a true reflection of the journey that began on a farm in Colombia and culminated in our roastery on Žitný Island.

Design

### Which connects the farm and the roastery

In each of our designs, we seek a clear connection between the coffee’s origin and us, Rye Island Roastery—the place where carefully selected beans are transformed into the final product. For us, design is more than just packaging. It’s a visual language that tells the story of the coffee, from the farmer to your cup.

The waves on the label refer to the Danube and its tributaries, which crisscross Rye Island a landscape of water, wind, and constant movement. You can feel that same rhythm during brewing, as water flows smoothly through the coffee and unlocks its aroma.

The icon on the packaging belongs to Panama. It features the Peristeria elata, known as the Flower of the Holy Spirit, Panama’s national orchid. It is a subtle reference to the delicate beauty of tropical forests and the precision with which exceptional lots are created. Just as the orchid blooms only under the right conditions, this profile is built on a balance of terroir, craftsmanship, and time.

Together, this creates a bridge between Panama and Slovakia—between the place where coffee is born and the place where it is transformed into an experience.

- 13 g of coffee – medium to medium-coarse grind
- 200 g of water – 92 °C
- 0:00 – Pour in 100 g of water with the valve open
- 1:00 – open the valve and pour 50 g in a circular pattern and 50 g into the center
- Total extraction time: 2:00–2:45

 

 

 

  

 

### OVERVIEW

**Origami is filtered coffee as a small daily ritual.**  
**Thanks to the dripper’s shape and the distinctive “petals” of the grooves, you can control the flow rate, sweetness, and purity of the flavor.**   
**All you need is a paper filter and a few precise pours, and this simple recipe will yield coffee that tastes like a little “hand-brewed” experience from a coffee shop.**

 

### RECIPE

- 15 g of coffee – medium to medium-coarse grind
- 250 g of water – 92 °C
- 0:00 – Pour in 50 g of water using a circular motion
- 1:00–1:10 – Pour 100 g more slowly and 100 g more quickly into the center using a circular motion
- Total extraction time: 1:50–2:30

**A short ritual that rewards precision. Once you’ve mastered the dose, grind, and extraction, the sweetness, body, and clarity of the flavor profile will shine through in your cup. A simple principle, a precise result.**

- Preheat both the portafilter and the cup.
- Weigh out 18.3 g and grind to 85 μm.
- Make the bed.
- Press it flat. Clean the edge of the basket.
- Extract at 93.5 °C. Target time: 26 s.
- Stop at 44 to 46 g.
