More About This Coffee

Henry Bonilla acquired El Arrayan after the passing of his father, but his journey in coffee began long before that. From a very young age, Henry was involved in every aspect of farm work, so stepping into a leadership role felt natural. Still, he wasn’t satisfied with simply continuing tradition — he introduced new technologies across the farm and began cultivating more demanding and high-quality varietals like Geisha and Pink Bourbon.

Today, beyond managing his own farm, Henry shares his experience with other coffee producers in the El Pital area, helping them improve their financial and production systems while working collectively toward higher quality.

Processing

Ripe cherries are harvested manually at peak maturity. After sorting and cleaning, the cherries undergo a short pre-fermentation phase before being slowly dried in marquesinas (covered raised beds) for around 15 days. The drying process is carefully monitored and the cherries are turned regularly to ensure even and consistent drying.

What makes it special

This is a coffee that reflects intention and progression — from the choice of varietal to the clean, controlled processing. The result is a cup that is both floral and fruity, with a refined, elegant balance.
