This washed microlot is made from Bourbon Ají, a rare and lesser-known coffee variety that’s not often seen on the global market. Its name comes from the fruit’s resemblance to ají peppers in both shape and color during ripening — making it not only visually striking but also exceptional in the cup.
The coffee comes from Zarza Coffee, a third-generation family farm in Bruselas, Huila — Colombia’s “Coffee Capital.” Led by the Gasca family, Zarza is committed to producing traceable, innovative, and high-quality coffees, while also incorporating beekeeping to support biodiversity and sustainability on the farm.
To highlight Ají’s natural sweetness and floral elegance, this lot underwent a carefully executed washed process:
Oxidation: 24 hours in cherry
Anaerobic fermentation: 60 hours
Pulping & second fermentation: Depulped and fermented again in sealed bags for 60 hours
Thermal shock: Applied post-wash
Drying: Marquesina (parabolic) drying for 10–12 days
This combination of controlled fermentation and gentle drying results in a cup that’s refined, clean, and layered with subtle complexity.
Bourbon Ají is a rare mutation of the Bourbon variety, cultivated only by a few producers in Colombia. Its scarcity lies in both its genetics and its limited planting, making each lot a true discovery.
Combined with the Gasca family’s meticulous processing, this coffee reveals the full potential of a unique and elegant variety.
