Processing

This washed coffee is crafted through a detailed process designed to highlight sweetness, complexity, and varietal clarity:

• Oxidation: 48 hours of controlled whole‑cherry oxidation

• Double Fermentation: Two-stage fermentation to intensify character

• Thermal Shock: Fixes aromatics and elevates sweetness

• Washing & Drying: Fully washed and dried to 10.6% moisture for optimal stability
