More About This Coffee

El Diviso is a project by brothers Nestor and Adrian Lasso, who took over their family farm in Huila, Colombia, and partnered with Jhoan Vergara to push the boundaries of Colombian specialty coffee.

Nestor is one of Colombia’s most recognized young producers. With support from Cata Export and formal training at Colombia’s top coffee school, SENA, he’s developed world-class fermentation techniques and an uncompromising focus on quality. His coffees have consistently reached the highest levels of recognition — including multiple Top 3 finishes at the World Barista Championship.

Processing

This rare Yellow Papayo lot underwent a multi-stage fermentation and drying protocol:

  • Oxidation: 36 hours in cherry

  • Anaerobic fermentation: 24 hours in sealed containers at 16–18 °C

  • Drying: Low-temperature mechanical drying up to 45 °C

  • Stabilization: Paused at 18% humidity, rested 60 hours in dark bags

  • Final drying: Until reaching 11% moisture

This careful, slow approach results in a funky, tropical cup with clarity and depth.
