This exceptional coffee comes from the highlands of Ayarza, Santa Rosa, in southern Guatemala.
Known for its volcanic soil, steady climate, and elevation, the Ayarza region produces coffees with a vibrant character and balanced sweetness. Local smallholder farmers cultivate coffee on small plots, often passed down through generations. But what truly sets this lot apart is the centralized processing at the Olam Cherry Mill, ensuring exceptional consistency and quality from crop to cup.
At the Olam Processing Station, careful attention is paid to every step of the washed coffee process:
Washed (Wet Process):
Ripe cherries (with less than 3% underripes) are handpicked and undergo cherry flotation to remove defects. They are then pulped, screen-sorted, and processed using one of two precise methods:
Classic: Fermented for 14 hours, then patio-dried and finished mechanically.
Mechanical: Mechanically demucilaged, centrifuge-dried, and slowly finished at low temperatures.
Each method highlights different nuances, from bright acidity and winey notes to a rounder, sweeter cup with full body.
Unlike many Guatemalan coffees that are farm-processed and vary from lot to lot, this coffee is the result of tight collaboration between Olam Coffee and local producers. Farmers receive a premium for ripe cherries, and centralized processing brings out the best in every bean. It’s a rare example of Guatemalan quality with exceptional traceability and flavor clarity.
